  • Hummus is a popular Middle Eastern dip or spread made from cooked and mashed chickpeas (garbanzo beans), blended with tahini (a paste made from sesame seeds), olive oil, lemon juice, garlic, and various seasonings.

  • Ingredients:
    • 1 can (15 ounces) chickpeas, drained and rinsed (or about 1 1/2 cups cooked chickpeas)
    • 1/4 cup fresh lemon juice (about 1 large lemon)
    • 1/4 cup tahini
    • 1 small garlic clove, minced
    • 2 tablespoons extra-virgin olive oil, plus more for serving
    • 1/2 teaspoon ground cumin
    • Salt to taste
    • 2 to 3 tablespoons water
    • Dash of paprika, for garnish
    • Chopped fresh parsley, for garnish (optional)
  • Instructions:
    • In a food processor, combine the tahini and lemon juice. Process for about 30 seconds to blend well. This step helps to create a smoother hummus.
    • Add the minced garlic, olive oil, ground cumin, and a pinch of salt to the mixture in the food processor. Process for about 30 seconds, or until well combined.
    • Add half of the chickpeas to the mixture in the food processor and process for about 1 minute. Scrape down the sides of the bowl, then add the remaining chickpeas. Process until the hummus is creamy and well mixed, about 1-2 minutes. If the mixture seems too thick, you can add 2-3 tablespoons of water while the food processor is running, until you reach your desired consistency.
    • Taste the hummus and adjust the seasonings if needed. You can add more lemon juice, salt, or cumin to taste.
    • To serve, transfer the hummus to a serving bowl. Drizzle some extra-virgin olive oil over the top, sprinkle with paprika for color, and garnish with chopped fresh parsley if desired.
    • Serve your homemade hummus with pita bread, vegetables, crackers, or as a spread for sandwiches or wraps.
