    • Food coloring: Optional food coloring can be added to give macarons their vibrant colors.
    • Filling: Common fillings include ganache, buttercream, jam, or curd, which can be flavored in various ways (e.g., chocolate, fruit, coffee).
  • Mixing:
    • The almond flour and powdered sugar are sifted together to remove any lumps and create a smooth mixture.
    • The egg whites and granulated sugar are whipped into a meringue until stiff peaks form. Food coloring is added at this stage if desired.
  • Macaronage:
    • The almond flour and powdered sugar mixture is gently folded into the meringue in several stages. This step is crucial to achieving the proper consistency known as “macaronage.”
